- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 1 tbsp dried rosemary
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine the lamb, sweet potatoes, and red onion.
- Drizzle with olive oil and sprinkle with rosemary, garlic powder, salt, and pepper. Toss to coat evenly.
- Spread the lamb and vegetables in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes, or until the lamb is cooked through and the sweet potatoes are tender.
- Garnish with fresh parsley, if desired, and serve immediately.
Notes
