Description

Sheet Pan Harissa Chicken with Sweet Potatoes is a simple and flavorful one-pan meal perfect for weeknights. Chicken thighs and sweet potatoes are tossed in a spicy harissa sauce and roasted until tender and golden.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons harissa paste
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the olive oil, harissa paste, lemon juice, ground cumin, smoked paprika, salt, and black pepper. Mix well to create the harissa sauce.
  3. Add the chicken pieces and sweet potato cubes to the bowl with the harissa sauce. Toss everything together until the chicken and sweet potatoes are evenly coated.
  4. Spread the chicken and sweet potatoes in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan, as this can steam the ingredients instead of roasting them.
  5. Roast for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the sweet potatoes are tender and slightly caramelized.
  6. If desired, broil for the last 2-3 minutes to get extra crispiness on the chicken and sweet potatoes.
  7. Remove from the oven and garnish with fresh chopped cilantro, if using. Serve immediately.

Notes

  • For extra spice, add more harissa paste.
  • If you don’t have sweet potatoes, regular potatoes or butternut squash can be used.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
