Description

A tender and flavorful pot roast cooked in a crock pot with caramelized onions and savory seasonings.


Ingredients

Scale
  • 3 lbs beef chuck roast
  • 4 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves

Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the roast on all sides until browned.
  2. Place the sliced onions in the crock pot. Add the seared roast on top.
  3. In a bowl, mix beef broth, Worcestershire sauce, garlic, thyme, salt, and pepper. Pour over the roast.
  4. Add bay leaves to the crock pot.
  5. Cover and cook on low for 8 hours or high for 5 hours until the meat is tender.
  6. Remove bay leaves before serving.

Notes

  • For deeper flavor, caramelize the onions before adding them to the crock pot.
  • Shred the meat and serve with mashed potatoes or crusty bread.
