Ingredients

- 3 lbs beef chuck roast
- 4 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp olive oil
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 bay leaves
Instructions
- Heat olive oil in a skillet over medium heat. Sear the roast on all sides until browned.
- Place the sliced onions in the crock pot. Add the seared roast on top.
- In a bowl, mix beef broth, Worcestershire sauce, garlic, thyme, salt, and pepper. Pour over the roast.
- Add bay leaves to the crock pot.
- Cover and cook on low for 8 hours or high for 5 hours until the meat is tender.
- Remove bay leaves before serving.
Notes
- For deeper flavor, caramelize the onions before adding them to the crock pot.
- Shred the meat and serve with mashed potatoes or crusty bread.
