Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can crushed tomatoes
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 (4.25 ounce) cans sardines in olive oil, drained and flaked
  • 8 ounces spaghetti or your favorite pasta
  • Salt and black pepper to taste
  • For the Gremolata:
  • 1/4 cup fresh parsley, chopped
  • 1 clove garlic, minced
  • 1 lemon, zested and juiced

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  2. Stir in crushed tomatoes, broth, oregano, and red pepper flakes (if using). Bring to a simmer and cook for 10-15 minutes, allowing flavors to meld.
  3. While the sauce simmers, cook pasta according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
  4. Add the flaked sardines to the tomato sauce and stir gently to combine. Season with salt and pepper to taste.
  5. Add the cooked pasta to the sauce. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  6. To make the gremolata, combine chopped parsley, minced garlic, and lemon zest in a small bowl.
  7. Serve the sardine tomato pasta hot, topped with a generous sprinkle of gremolata and a squeeze of fresh lemon juice.

Notes

  • You can use any type of canned fish you prefer, such as tuna or mackerel.
  • For a spicier kick, add more red pepper flakes.
  • Fresh basil can be used instead of or in addition to parsley in the gremolata.
  • A sprinkle of grated Parmesan cheese is a delicious addition.
