A warm and comforting soup made with rotisserie chicken and mushrooms.
Ingredients

- 1 rotisserie chicken, shredded
- 2 cups mushrooms, sliced
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrot, and celery. Cook until softened.
- Add mushrooms and cook until they release their moisture.
- Pour in chicken broth and bring to a simmer.
- Add shredded chicken and thyme. Simmer for 15 minutes.
- Season with salt and pepper.
- Serve hot.

- Use leftover rotisserie chicken for convenience.
- Add noodles or rice for a heartier meal.
