- 1 cup breadcrumbs
- 1/2 cup chopped walnuts
- 1/2 cup dried cranberries
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Butterfly the beef tenderloin and season with salt and pepper.
- Mix breadcrumbs, walnuts, cranberries, garlic, and parsley in a bowl.
- Spread the stuffing mixture evenly over the tenderloin.
- Roll the tenderloin tightly and secure with kitchen twine.
- Heat olive oil in a skillet and sear the tenderloin on all sides.
- Transfer to a baking dish and roast for 25-30 minutes.
- Let rest for 10 minutes before slicing.
