Description

These soft pumpkin cookies are simple to make and feature a delightful pumpkin spice flavor, topped with a creamy frosting.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • For the Frosting:
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 2 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Stir in the pumpkin puree.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
  9. Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. While cookies cool, prepare the frosting: In a medium bowl, beat together softened butter and cream cheese until smooth.
  11. Gradually beat in the powdered sugar until smooth.
  12. Stir in the vanilla extract and 1 tablespoon of milk. Add more milk if needed to reach desired frosting consistency.
  13. Once cookies are completely cool, spread frosting on top of each cookie.

Notes

  • Ensure your butter and cream cheese are at room temperature for a smooth frosting.
  • Do not overbake the cookies; they should be soft and slightly chewy.
  • These cookies store well in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
