Description

Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 1 cup fresh pineapple, chopped
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1 tbsp olive oil
  • 4 large flour tortillas
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chicken and cook until no longer pink, about 5-7 minutes.
  3. Add onion, bell pepper, and garlic. Cook for 3 minutes.
  4. Stir in pineapple, soy sauce, honey, cumin, and paprika. Cook for 2 more minutes.
  5. Warm tortillas in a dry pan or microwave for 20 seconds.
  6. Spoon the chicken mixture onto each tortilla and fold into burritos.
  7. Garnish with cilantro and serve.
