- 1 tablespoon olive oil
- 1 pound ground chicken
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sriracha (optional)
- Salt and pepper to taste
- 1 head butter lettuce, separated into leaves
- 1/4 cup chopped peanuts, for garnish
- 1/4 cup chopped fresh cilantro, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground chicken and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic and grated ginger. Cook for 1 minute until fragrant.
- In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, and sriracha (if using).
- Pour the peanut sauce over the chicken mixture in the skillet. Stir to combine and cook for 2-3 minutes until the sauce thickens slightly.
- Season with salt and pepper to taste.
- Spoon the chicken mixture into individual lettuce cups.
- Garnish with chopped peanuts and fresh cilantro. Serve immediately.
Notes
- You can substitute ground turkey or beef for ground chicken.
- Adjust the amount of sriracha to your spice preference.
- For a vegetarian option, use crumbled tofu or finely chopped mushrooms instead of meat.
