Description

This recipe features pan-seared salmon fillets with a flavorful Parmesan and herb crust, offering a delightful combination of crispy texture and savory taste. It’s a quick and easy dish perfect for a weeknight meal or a special occasion.

Ingredients

Scale
  • 4 (6 ounce) salmon fillets, skin on or off
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice (optional, for serving)

Instructions

  1. Pat the salmon fillets dry with paper towels.
  2. In a small bowl, combine the Parmesan cheese, parsley, chives, garlic powder, salt, and black pepper. Mix well.
  3. Press the Parmesan-herb mixture evenly onto the top of each salmon fillet.
  4. Heat the olive oil in a large non-stick skillet over medium-high heat.
  5. Once the oil is shimmering, carefully place the salmon fillets, crust-side down, into the skillet.
  6. Cook for 3-5 minutes, or until the crust is golden brown and crispy.
  7. Carefully flip the salmon fillets.
  8. Cook for another 3-5 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time will vary based on thickness.
  9. Remove the salmon from the skillet and let it rest for a minute or two.
  10. Serve immediately, optionally with a squeeze of fresh lemon juice.

Notes

  • Adjust cooking time based on the thickness of your salmon fillets.
  • For extra flavor, you can add a pinch of red pepper flakes to the crust mixture.
  • If you prefer a less crispy crust, you can bake the salmon after searing, or bake it entirely.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
