Ingredients

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate medium bowl, whisk together the ricotta cheese, milk, egg, melted butter, orange zest, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
  4. Heat a lightly buttered or oiled griddle or non-stick pan over medium heat.
  5. Pour about 1/4 cup of batter per pancake onto the hot griddle.
