A quick and easy one-pan meal featuring flaky cod and succulent shrimp with vibrant vegetables.

- 1 tablespoon olive oil
- 1 red onion, sliced
- 2 bell peppers (any color), sliced
- 1 zucchini, sliced
- 1 pint cherry tomatoes
- 1 pound cod fillets
- 1 pound red shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced red onion, bell peppers, zucchini, and cherry tomatoes. Drizzle with olive oil and season with salt, pepper, oregano, and paprika. Toss to coat evenly.
- Spread the seasoned vegetables in a single layer on a large baking sheet.
- Roast for 15 minutes.
- Remove the baking sheet from the oven. Add the cod fillets and shrimp to the baking sheet, nestling them among the vegetables. Sprinkle the minced garlic over the cod and shrimp.
- Return the baking sheet to the oven and cook for another 10-12 minutes, or until the cod is flaky and the shrimp are pink and cooked through.
- Garnish with fresh parsley before serving.
Notes
- You can use any firm white fish like halibut or snapper instead of cod.
- Adjust the seasoning to your preference.
- Serve with a side of rice or quinoa for a complete meal.
