Description

These no-bake mocha espresso protein balls are a quick and easy snack. They are packed with protein and have a delicious coffee and chocolate flavor.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup protein powder (vanilla or chocolate)
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons instant espresso powder
  • 1/4 teaspoon salt
  • 1/2 cup nut butter (almond or peanut)
  • 1/4 cup maple syrup or honey
  • 2 tablespoons milk (dairy or non-dairy)
  • 1/2 teaspoon vanilla extract (alcohol-free)
  • Optional: 1/4 cup mini chocolate chips

Instructions

  1. In a large bowl, combine the rolled oats, protein powder, cocoa powder, espresso powder, and salt.
  2. Add the nut butter, maple syrup, milk, and vanilla extract to the dry ingredients. Mix until well combined and a dough forms.
  3. If desired, stir in the mini chocolate chips.
  4. Roll the mixture into 1-inch balls.
  5. Store the protein balls in an airtight container in the refrigerator for up to a week.

Notes

  • You can adjust the sweetness by adding more or less maple syrup/honey.
  • If the mixture is too dry, add a little more milk, one teaspoon at a time.
  • If the mixture is too wet, add a little more oats or protein powder.
  • These protein balls are great for meal prep and on-the-go snacking.
