- 1/2 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup butter, melted
- 1/4 cup milk
- 1 teaspoon peppermint extract
- 1 cup mini chocolate chips
- 1 cup white chocolate chips (for coating, optional)
- 2 tablespoons coconut oil (for coating, optional)
Instructions
- In a large bowl, combine the chocolate cookie crumbs, powdered sugar, cocoa powder, and salt.
- Add the melted butter, milk, and peppermint extract. Mix until well combined.
- Stir in the mini chocolate chips.
- Roll the mixture into 1-inch balls.
- Place the balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes, or until firm.
- If coating, melt the white chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each ball into the melted white chocolate, allowing excess to drip off.
- Return the coated balls to the parchment-lined baking sheet.
- Refrigerate again until the coating is set.
Notes
- Store Mint Chocolate Chip Balls in an airtight container in the refrigerator for up to 1 week.
- You can use other types of cookies for the crumbs, such as vanilla wafers, for a different flavor profile.
- For a stronger mint flavor, add a few drops of green food coloring to the mixture.
