- 4 ears fresh corn on the cob, husked
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons fresh lime juice
- 1/4 teaspoon chili powder, plus more for sprinkling
- 1/4 teaspoon smoked paprika
- 1/4 cup crumbled cotija cheese (or feta cheese)
- 2 tablespoons chopped fresh cilantro
- Lime wedges, for serving
Instructions
- Preheat your grill to medium-high heat.
- Grill the corn on the cob for 10-15 minutes, turning occasionally, until kernels are tender and slightly charred.
- While the corn is grilling, prepare the sauce. In a small bowl, combine mayonnaise, sour cream, lime juice, chili powder, and smoked paprika. Mix well.
- Once the corn is cooked, spread each ear generously with the prepared sauce.
- Sprinkle the sauced corn with crumbled cotija cheese and chopped cilantro.
- Dust with additional chili powder, if desired.
- Serve immediately with lime wedges.
Notes
- For an extra smoky flavor, you can briefly char the corn over an open flame after grilling.
- If cotija cheese is unavailable, feta cheese is a good substitute.
