- 1 (4-5 pound) boneless leg of lamb, butterflied
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh oregano, chopped

- 1/2 teaspoon black pepper
- 1/2 cup lemon juice
- 1/4 cup chicken broth
Instructions
- Preheat oven to 375°F (190°C).
- Pat the lamb dry with paper towels.
- In a small bowl, combine olive oil, minced garlic, rosemary, oregano, salt, and pepper.
- Rub the herb mixture all over the lamb.
- Place the lamb in a roasting pan.
- Pour lemon juice and chicken broth around the lamb in the pan.
- Roast for 1 hour, or until internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from oven, tent with foil, and let rest for 15-20 minutes before slicing.
- Slice against the grain and serve with pan juices.
