Description

Ingredients

  • 1 (4-5 pound) boneless leg of lamb, butterflied
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup lemon juice
  • 1/4 cup chicken broth

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the lamb dry with paper towels.
  3. In a small bowl, combine olive oil, minced garlic, rosemary, oregano, salt, and pepper.
  4. Rub the herb mixture all over the lamb.
  5. Place the lamb in a roasting pan.
  6. Pour lemon juice and chicken broth around the lamb in the pan.
  7. Roast for 1 hour, or until internal temperature reaches 135°F (57°C) for medium-rare.
  8. Remove from oven, tent with foil, and let rest for 15-20 minutes before slicing.
  9. Slice against the grain and serve with pan juices.
