Ingredients

- 1 red bell pepper, cored and seeded, cut into 1-inch strips
- 1 yellow bell pepper, cored and seeded, cut into 1-inch strips
- 1 zucchini, trimmed and cut into 1/2-inch thick rounds
- 1 red onion, peeled and cut into 1/2-inch thick rounds
- 1 eggplant, trimmed and cut into 1/2-inch thick rounds
- 1/2 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine the bell peppers, zucchini, red onion, and eggplant.
- In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, salt, and pepper.
- Pour the olive oil mixture over the vegetables and toss to coat evenly.
- Arrange the vegetables on the hot grill in a single layer.
- Grill for 5-7 minutes per side, or until tender and lightly charred.
- Remove the grilled vegetables from the grill and serve immediately.
Notes
- You can use other vegetables like cherry tomatoes, asparagus, or mushrooms.
- A grill pan can be used if you don’t have an outdoor grill.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
