Description

Grilled vegetables with Mediterranean flavors. This healthy side dish is perfect for any meal.


Ingredients

  • 1 red bell pepper, cored and seeded, cut into 1-inch strips
  • 1 yellow bell pepper, cored and seeded, cut into 1-inch strips
  • 1 zucchini, trimmed and cut into 1/2-inch thick rounds
  • 1 red onion, peeled and cut into 1/2-inch thick rounds
  • 1 eggplant, trimmed and cut into 1/2-inch thick rounds
  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine the bell peppers, zucchini, red onion, and eggplant.
  3. In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, salt, and pepper.
  4. Pour the olive oil mixture over the vegetables and toss to coat evenly.
  5. Arrange the vegetables on the hot grill in a single layer.
  6. Grill for 5-7 minutes per side, or until tender and lightly charred.
  7. Remove the grilled vegetables from the grill and serve immediately.

Notes

  • You can use other vegetables like cherry tomatoes, asparagus, or mushrooms.
  • A grill pan can be used if you don’t have an outdoor grill.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
