- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup vegetable broth
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 pounds white fish fillets (such as cod or snapper), cut into 2-inch pieces
- 1/2 cup breadcrumbs
- 2 tablespoons grated Parmesan cheese (optional)
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in diced tomatoes, vegetable broth, parsley, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Arrange fish pieces in the prepared baking dish. Pour tomato sauce over the fish.
- In a small bowl, combine breadcrumbs and Parmesan cheese (if using). Sprinkle over the fish and sauce.
- Bake for 20-25 minutes, or until fish flakes easily with a fork and breadcrumbs are golden brown.
- Serve hot.
Notes
- You can use any firm white fish for this recipe.
- For extra flavor, add a pinch of red pepper flakes to the tomato sauce.
