Description

These Mediterranean Fish Gratins are a flavorful and healthy meal, perfect for a quick dinner. Flaky fish is baked with a vibrant tomato sauce and topped with breadcrumbs for a delightful crunch.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup vegetable broth
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds white fish fillets (such as cod or snapper), cut into 2-inch pieces
  • 1/2 cup breadcrumbs
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in diced tomatoes, vegetable broth, parsley, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  4. Arrange fish pieces in the prepared baking dish. Pour tomato sauce over the fish.
  5. In a small bowl, combine breadcrumbs and Parmesan cheese (if using). Sprinkle over the fish and sauce.
  6. Bake for 20-25 minutes, or until fish flakes easily with a fork and breadcrumbs are golden brown.
  7. Serve hot.

Notes

  • You can use any firm white fish for this recipe.
