Description

A simple and flavorful Mediterranean-style sea bass traybake featuring flaky fish, tender vegetables, and aromatic herbs, all cooked on one pan for easy cleanup.


Ingredients

  • 2 (6 ounce) sea bass fillets
  • 1 tablespoon olive oil
  • 1 lemon, thinly sliced
  • 1 pint cherry tomatoes
  • 1 red onion, cut into wedges
  • 1 green bell pepper, cored and sliced
  • 1 zucchini, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper.
  3. Arrange the sea bass fillets in the center of the prepared baking sheet.
  4. Scatter the cherry tomatoes, red onion, green bell pepper, and zucchini around the fish.
  5. Drizzle everything with olive oil.
  6. Sprinkle the minced garlic, oregano, thyme, salt, and pepper over the fish and vegetables.
  7. Place the lemon slices on top of the sea bass fillets.
  8. Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork, and the vegetables are tender.
  9. Garnish with fresh chopped parsley before serving.
