Ingredients

  • 1 pound boneless, skinless chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup cooked brown rice
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 avocado, diced (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced chicken and season with chili powder, cumin, garlic powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  2. Divide the cooked rice evenly among four meal prep containers.
  3. Add the cooked chicken, black beans, and corn to each container.
  4. Top each bowl with a spoonful of salsa.
  5. If desired, add chopped cilantro and diced avocado just before serving.
  6. Store in the refrigerator for up to 4 days.

Notes

  • You can customize these bowls with your favorite toppings like shredded cheese, a dollop of sour cream or Greek yogurt, or a squeeze of lime juice.
