- 1 pound boneless, skinless chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 1 cup cooked brown rice
- 1 (15-ounce) can black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1/2 cup salsa
- 1/4 cup chopped fresh cilantro (optional)
- 1 avocado, diced (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced chicken and season with chili powder, cumin, garlic powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Divide the cooked rice evenly among four meal prep containers.
- Add the cooked chicken, black beans, and corn to each container.
- Top each bowl with a spoonful of salsa.
- If desired, add chopped cilantro and diced avocado just before serving.
- Store in the refrigerator for up to 4 days.
Notes
- You can customize these bowls with your favorite toppings like shredded cheese, a dollop of sour cream or Greek yogurt, or a squeeze of lime juice.
- For extra spice, add a pinch of cayenne pepper to the chicken seasoning.
- To save time, use pre-cooked chicken or rotisserie chicken.
