Ingredients

  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup chia seeds
  • 1 tablespoon matcha green tea powder
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine rolled oats, shredded coconut, chia seeds, and matcha powder in a large bowl.
  2. Add almond butter, maple syrup, vanilla extract, and salt to the dry ingredients. Mix until well combined and a sticky dough forms.
  3. Roll the mixture into 1-inch balls.
  4. Place the energy balls on a plate or baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to one week.
