- 1 large head broccoli, cut into florets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- Salt and black pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes until tender-crisp. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
- Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.
- Pour in the vegetable broth and bring to a simmer. Cook for 3-5 minutes until the liquid has reduced slightly.
- Reduce heat to low and stir in the heavy cream and Parmesan cheese. Cook, stirring constantly, until the cheese has melted and the sauce has thickened slightly.
- Add the cooked broccoli florets to the sauce and toss to coat evenly.
- Season with salt and black pepper to taste. Serve immediately with extra Parmesan cheese, if desired.

- Adjust the amount of red pepper flakes to your spice preference.
- For a richer flavor, you can roast the broccoli instead of boiling it.
