Ingredients

  • 1 large head broccoli, cut into florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes until tender-crisp. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
  3. Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.
  4. Pour in the vegetable broth and bring to a simmer. Cook for 3-5 minutes until the liquid has reduced slightly.
  5. Reduce heat to low and stir in the heavy cream and Parmesan cheese. Cook, stirring constantly, until the cheese has melted and the sauce has thickened slightly.
  6. Add the cooked broccoli florets to the sauce and toss to coat evenly.
  7. Season with salt and black pepper to taste. Serve immediately with extra Parmesan cheese, if desired.
