Description

These make-ahead breakfast burritos are perfect for busy mornings. Prepare them in advance and simply reheat for a quick and satisfying breakfast.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (any color)
  • 6 large eggs, beaten
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup cooked beef sausage, crumbled
  • 1/2 cup shredded cheddar cheese
  • 6 large flour tortillas (burrito size)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper; cook until softened, about 5 minutes.
  2. In a medium bowl, whisk together eggs, milk, salt, and pepper. Pour egg mixture into the skillet with the vegetables.
  3. Cook, stirring occasionally, until eggs are scrambled and cooked through.
  4. Stir in the cooked beef sausage and cheddar cheese until cheese is melted.
  5. Warm tortillas according to package directions (microwave or skillet).
  6. Spoon about 1/2 cup of the egg mixture onto the center of each tortilla.
  7. Fold in the sides of the tortilla, then roll it up tightly from the bottom.
  8. If serving immediately, enjoy. For make-ahead, wrap each burrito tightly in plastic wrap, then foil.
  9. Freeze for up to 3 months. To reheat, remove foil and plastic wrap, wrap in a paper towel, and microwave for 2-3 minutes, or until heated through.
