Description
These make-ahead breakfast burritos are perfect for busy mornings. Prepare them in advance and simply reheat for a quick and satisfying breakfast.

- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper (any color)
- 6 large eggs, beaten
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup cooked beef sausage, crumbled
- 1/2 cup shredded cheddar cheese
- 6 large flour tortillas (burrito size)
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and bell pepper; cook until softened, about 5 minutes.
- In a medium bowl, whisk together eggs, milk, salt, and pepper. Pour egg mixture into the skillet with the vegetables.
- Cook, stirring occasionally, until eggs are scrambled and cooked through.
- Stir in the cooked beef sausage and cheddar cheese until cheese is melted.
- Warm tortillas according to package directions (microwave or skillet).
- Spoon about 1/2 cup of the egg mixture onto the center of each tortilla.
- Fold in the sides of the tortilla, then roll it up tightly from the bottom.
- If serving immediately, enjoy. For make-ahead, wrap each burrito tightly in plastic wrap, then foil.
- Freeze for up to 3 months. To reheat, remove foil and plastic wrap, wrap in a paper towel, and microwave for 2-3 minutes, or until heated through.
Notes
- Customize with your favorite vegetables like spinach, mushrooms, or diced tomatoes.
- Add a dash of hot sauce or salsa for extra flavor.
- These burritos are a great way to use up leftover cooked meat.
