These classic French Madeleines are buttery and delicate, with a distinctive shell shape. They are perfect for a light dessert or afternoon tea.

- 1/2 cup (113g) unsalted butter, melted, plus more for greasing
- 2 large eggs
- 1/2 cup (100g) granulated sugar
- 1 teaspoon vanilla extract (alcohol-free)
- 1 cup (125g) all-purpose flour, plus more for dusting
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 375°F (190°C). Grease and flour a Madeleine pan, tapping out any excess.
- In a medium bowl, whisk together the eggs, granulated sugar, and vanilla extract until light and fluffy, about 2-3 minutes.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually fold the dry ingredients into the egg mixture until just combined.
- Gently fold in the melted butter until incorporated. Do not overmix.
- Spoon the batter into the prepared Madeleine pan, filling each mold about two-thirds full.
- Bake for 8-12 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Remove the Madeleines from the pan immediately and let them cool on a wire rack.
Notes
- For best results, chill the batter for at least 30 minutes before baking to help create the characteristic ‘hump’.
- Dust with powdered sugar before serving, if desired.
- Store Madeleines in an airtight container at room temperature for up to 3 days.
