Description

These classic French Madeleines are buttery and delicate, with a distinctive shell shape. They are perfect for a light dessert or afternoon tea.


Ingredients

  • 1/2 cup (113g) unsalted butter, melted, plus more for greasing
  • 2 large eggs
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon vanilla extract (alcohol-free)
  • 1 cup (125g) all-purpose flour, plus more for dusting
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a Madeleine pan, tapping out any excess.
  2. In a medium bowl, whisk together the eggs, granulated sugar, and vanilla extract until light and fluffy, about 2-3 minutes.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually fold the dry ingredients into the egg mixture until just combined.
  5. Gently fold in the melted butter until incorporated. Do not overmix.
  6. Spoon the batter into the prepared Madeleine pan, filling each mold about two-thirds full.
  7. Bake for 8-12 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the Madeleines from the pan immediately and let them cool on a wire rack.

Notes

  • For best results, chill the batter for at least 30 minutes before baking to help create the characteristic ‘hump’.
  • Dust with powdered sugar before serving, if desired.
  • Store Madeleines in an airtight container at room temperature for up to 3 days.
