- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon lemon zest
- 1/2 cup fresh lemon juice
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Pat chicken thighs dry with paper towels.
- In a large bowl, combine olive oil, rosemary, lemon zest, lemon juice, minced garlic, salt, and pepper.
- Add chicken thighs to the bowl and toss to coat evenly.
- Arrange chicken thighs in a single layer in a baking dish.
- Bake for 35-45 minutes, or until internal temperature reaches 165°F (74°C) and skin is crispy.
- Serve hot.
Notes
- For extra flavor, marinate the chicken for at least 30 minutes, or up to 4 hours, in the refrigerator.
- Garnish with fresh rosemary sprigs and lemon slices before serving.
