Description

Juicy lemon rosemary chicken thighs, seasoned and baked to perfection. A simple and flavorful main course.


Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon lemon zest
  • 1/2 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken thighs dry with paper towels.
  3. In a large bowl, combine olive oil, rosemary, lemon zest, lemon juice, minced garlic, salt, and pepper.
  4. Add chicken thighs to the bowl and toss to coat evenly.
  5. Arrange chicken thighs in a single layer in a baking dish.
  6. Bake for 35-45 minutes, or until internal temperature reaches 165°F (74°C) and skin is crispy.
  7. Serve hot.

Notes

  • For extra flavor, marinate the chicken for at least 30 minutes, or up to 4 hours, in the refrigerator.
  • Garnish with fresh rosemary sprigs and lemon slices before serving.
