- 1 whole chicken (3–4 pounds)
- 2 lemons, one sliced, one juiced
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
Instructions
- Preheat oven to 400°F (200°C).
- Pat the chicken dry with paper towels.
- In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper.
- Rub the herb mixture all over the chicken, including under the skin.
- Place lemon slices inside the chicken cavity.
- Place the chicken in a roasting pan.
- Pour lemon juice and chicken broth into the bottom of the roasting pan.
- Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Baste the chicken occasionally with the pan juices during roasting.
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
Notes
- For extra crispy skin, increase oven temperature to 425°F (220°C) for the last 15-20 minutes of roasting.
- Serve with roasted vegetables or a fresh salad.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
