Description

This recipe delivers a flavorful and juicy roasted chicken with a crispy skin, infused with lemon and herbs. It is easy to prepare and perfect for a family meal.


Ingredients

  • 1 whole chicken (34 pounds)
  • 2 lemons, one sliced, one juiced
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat the chicken dry with paper towels.
  3. In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper.
  4. Rub the herb mixture all over the chicken, including under the skin.
  5. Place lemon slices inside the chicken cavity.
  6. Place the chicken in a roasting pan.
  7. Pour lemon juice and chicken broth into the bottom of the roasting pan.
  8. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  9. Baste the chicken occasionally with the pan juices during roasting.
  10. Remove the chicken from the oven and let it rest for 10 minutes before carving.

Notes

  • For extra crispy skin, increase oven temperature to 425°F (220°C) for the last 15-20 minutes of roasting.
  • Serve with roasted vegetables or a fresh salad.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
