Description

These lemon cookies are soft, chewy, and bursting with fresh lemon flavor. They are easy to make and perfect for any occasion.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract, lemon zest, and lemon juice.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Scoop dough by rounded tablespoons and roll into balls. Roll each ball in powdered sugar to coat.
  6. Place cookies 2 inches apart on prepared baking sheets.
  7. Bake for 10-12 minutes, or until edges are lightly golden and centers are set.
  8. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra lemon flavor, add a few drops of lemon extract to the dough.
  • Store cookies in an airtight container at room temperature for up to 3 days.
  • Dough can be made ahead and refrigerated for up to 2 days. Let it come to room temperature before rolling and baking.
