Description
A tender pot roast cooked with caramelized onions.
Ingredients

- 3 lbs beef chuck roast
- 4 large onions, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 2 sprigs fresh thyme
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Season beef with salt and pepper, then sear until browned on all sides.
- Remove beef and sauté onions until caramelized.
- Add garlic and cook for 1 minute.
- Return beef to the pot.
- Pour beef broth and Worcestershire sauce over the roast.
- Add thyme and bay leaf.
- Cover and simmer for 3 hours or until tender.
- Discard thyme and bay leaf before serving.
Notes
- Slice onions thinly for even caramelization.
- Use a heavy-bottomed pot for even cooking.
- Let roast rest for 10 minutes before slicing.
