Description

A tender pot roast cooked with caramelized onions.


Ingredients

Scale
  • 3 lbs beef chuck roast
  • 4 large onions, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 sprigs fresh thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season beef with salt and pepper, then sear until browned on all sides.
  3. Remove beef and sauté onions until caramelized.
  4. Add garlic and cook for 1 minute.
  5. Return beef to the pot.
  6. Pour beef broth and Worcestershire sauce over the roast.
  7. Add thyme and bay leaf.
  8. Cover and simmer for 3 hours or until tender.
  9. Discard thyme and bay leaf before serving.

Notes

  • Slice onions thinly for even caramelization.
  • Use a heavy-bottomed pot for even cooking.
  • Let roast rest for 10 minutes before slicing.
