Spicy Jerk Shrimp Tacos with a refreshing pineapple salsa.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced pineapple
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss shrimp with jerk seasoning and olive oil.
  2. Heat a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
  3. While shrimp cooks, prepare the pineapple salsa: In a small bowl, combine diced pineapple, red onion, cilantro, and lime juice. Season with salt and pepper.
  4. Warm the tortillas according to package directions.
  5. Assemble tacos: Place a spoonful of shredded cabbage on each tortilla. Top with jerk shrimp and pineapple salsa.
