Spicy Jerk Shrimp Tacos with a refreshing pineapple salsa.

- 1 pound large shrimp, peeled and deveined
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 8 small corn tortillas
- 1 cup shredded cabbage
- 1/2 cup diced pineapple
- 1/4 cup chopped red onion
- 2 tablespoons chopped cilantro
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a bowl, toss shrimp with jerk seasoning and olive oil.
- Heat a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
- While shrimp cooks, prepare the pineapple salsa: In a small bowl, combine diced pineapple, red onion, cilantro, and lime juice. Season with salt and pepper.
- Warm the tortillas according to package directions.
- Assemble tacos: Place a spoonful of shredded cabbage on each tortilla. Top with jerk shrimp and pineapple salsa.
Notes
- Adjust jerk seasoning to your spice preference.
- Serve with a side of avocado or a dollop of sour cream for extra creaminess.
