- In a large bowl, combine the chilled heavy cream, granulated sugar, and vanilla extract.
- Whip the mixture with an electric mixer on medium-high speed until stiff peaks form. Be careful not to over-whip.
- Lay out four slices of bread. Spread a generous layer of whipped cream on each slice.
- Arrange the sliced strawberries on top of the cream on two of the bread slices. For best results, consider the final cut of the sandwich and arrange the strawberries to show well.
- Top the strawberries with another layer of whipped cream, ensuring the strawberries are fully encased.
- Place the remaining two slices of bread on top, cream-side down, to form the sandwiches.
- Gently press down on the sandwiches to secure the filling.
- Wrap each sandwich tightly in plastic wrap.
- Refrigerate for at least 30 minutes to allow the cream to set and the flavors to meld.
- Once chilled, unwrap the sandwiches. Using a sharp, serrated knife, carefully trim off the crusts.
