Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Arrange the fish fillets on the prepared baking sheet.
- In a large bowl, combine the cherry tomatoes, bell pepper, red onion, and minced garlic.
- Drizzle the vegetables with olive oil, then sprinkle with oregano, salt, and pepper. Toss to coat evenly.
- Spread the seasoned vegetables around the fish on the baking sheet.
- Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork, and the vegetables are tender-crisp.
- Garnish with fresh parsley before serving.
