Ingredients

- 4 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Grill or roast the corn until lightly charred.
- Cut the kernels off the cob and place in a bowl.
- In another bowl, mix mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper.
- Pour the dressing over the corn and toss well.
- Add cotija cheese and cilantro. Mix gently.
- Serve chilled or at room temperature.
