Description

A refreshing salad combining crisp Honeycrisp apples and fresh broccoli with a light dressing.


Ingredients

  • 2 cups chopped broccoli florets
  • 1 large Honeycrisp apple, diced
  • 1/4 cup chopped red onion
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1/4 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Wash and chop broccoli into small florets.
  2. Dice the apple and soak in lemon water to prevent browning.
  3. In a large bowl, combine broccoli, apple, red onion, cranberries, and walnuts.
  4. In a small bowl, whisk together yogurt, honey, lemon juice, salt, and pepper.
  5. Pour dressing over salad and toss to coat evenly.
  6. Serve immediately or chill for 30 minutes before serving.
