Description
A refreshing salad combining crisp Honeycrisp apples and fresh broccoli with a light dressing.
Ingredients

- 2 cups chopped broccoli florets
- 1 large Honeycrisp apple, diced
- 1/4 cup chopped red onion
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 1/4 cup plain Greek yogurt
- 1 tbsp honey
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Wash and chop broccoli into small florets.
- Dice the apple and soak in lemon water to prevent browning.
- In a large bowl, combine broccoli, apple, red onion, cranberries, and walnuts.
- In a small bowl, whisk together yogurt, honey, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to coat evenly.
- Serve immediately or chill for 30 minutes before serving.
Notes
- Store leftovers in an airtight container for up to 2 days.
- Add grilled chicken for extra protein.
- Replace walnuts with almonds for variation.
