Description

A comforting and hearty homestyle chicken noodle soup made with tender chicken, vegetables, and noodles in a flavorful broth.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cups chicken broth
  • 2 cups water
  • 2 cups shredded cooked chicken
  • 2 cups egg noodles
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic, thyme, and rosemary. Cook for 1 minute.
  4. Pour in chicken broth and water. Bring to a boil.
  5. Add shredded chicken and egg noodles. Cook for 8-10 minutes until noodles are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot.

  • Use leftover rotisserie chicken for convenience.
  • Store leftovers in the fridge for up to 3 days.
