Instructions
- Brown the ground beef in a large pot over medium heat.
- Add the onion, carrots, and celery. Cook until vegetables soften.
- Stir in the potatoes, beef broth, diced tomatoes, thyme, and oregano.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
