Description

A healthy and easy one-pot cod and rice dish, perfect for a quick and nutritious meal.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 1.5 lbs cod fillets
  • 1/2 cup frozen peas
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Stir in minced garlic and diced red bell pepper. Cook for another 3 minutes.
  3. Add brown rice, vegetable broth, dried oregano, paprika, salt, and black pepper to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  4. Gently place cod fillets on top of the rice. Cover and continue to cook for 10-12 minutes, or until the cod flakes easily with a fork and the rice is tender.
  5. Stir in frozen peas and cook for 2-3 minutes, until heated through.
  6. Garnish with fresh chopped parsley before serving.

Notes

  • You can use white fish like haddock or pollock instead of cod.
  • Adjust seasoning to your preference.
  • For extra flavor, add a squeeze of lemon juice before serving.
