Ingredients

- 1 pound ground beef
- 1 onion, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon tomato paste
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add the onion, carrots, and garlic. Cook until softened.
- Stir in the potatoes, beef broth, diced tomatoes, salt, pepper, thyme, and tomato paste.
- Bring to a boil, then reduce heat and simmer for 30 minutes or until vegetables are tender.
- Serve hot.
Notes
- For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the stew during the last 5 minutes of cooking.
- You can substitute ground turkey for a leaner option.
