Description
A hearty and easy-to-make hobo casserole with ground beef, potatoes, and vegetables. Perfect for a family dinner.

- 1 lb ground beef
- 4 medium potatoes, sliced
- 1 onion, chopped
- 1 bell pepper, diced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Cook ground beef until browned. Drain excess fat.
- Add onions and bell pepper to the skillet. Cook for 3-4 minutes until softened.
- In a bowl, mix condensed soup and milk. Stir in salt and black pepper.
- Layer sliced potatoes in a greased baking dish. Top with the ground beef mixture.
- Pour the soup mixture over the beef and potatoes.
- Sprinkle shredded cheese on top.
- Cover with foil and bake for 45 minutes. Remove foil and bake for another 15 minutes until cheese is bubbly and potatoes are tender.
- Let cool for 5 minutes before serving.
Notes
- You can substitute ground turkey for ground beef.
- Add other vegetables like carrots or peas if desired.
- Store leftovers in an airtight container for up to 3 days.
