Description

Grilled Vegetable Skewers are a colorful and healthy dish, perfect for any gathering. They feature a variety of vegetables marinated and grilled to perfection.


Ingredients

  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 zucchini, cut into 1/2-inch thick rounds
  • 1 red onion, cut into 1-inch pieces
  • 8 ounces button mushrooms, whole
  • 1 pint cherry tomatoes
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, combine the red bell pepper, yellow bell pepper, zucchini, red onion, mushrooms, and cherry tomatoes.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, garlic powder, salt, and black pepper.
  4. Pour the marinade over the vegetables and toss to coat evenly. Let marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.
  5. Preheat your grill to medium-high heat.
  6. Thread the marinated vegetables onto the skewers, alternating the different vegetables for a colorful presentation.
  7. Grill the skewers for 8-12 minutes, turning occasionally, until the vegetables are tender-crisp and have nice grill marks.
  8. Remove from the grill and serve hot.
