- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, cut into 1/2-inch thick rounds
- 1 red onion, cut into 1-inch pieces
- 8 ounces button mushrooms, whole
- 1 pint cherry tomatoes
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, combine the red bell pepper, yellow bell pepper, zucchini, red onion, mushrooms, and cherry tomatoes.
- In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, garlic powder, salt, and black pepper.
- Pour the marinade over the vegetables and toss to coat evenly. Let marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.
- Preheat your grill to medium-high heat.
- Thread the marinated vegetables onto the skewers, alternating the different vegetables for a colorful presentation.
- Grill the skewers for 8-12 minutes, turning occasionally, until the vegetables are tender-crisp and have nice grill marks.
- Remove from the grill and serve hot.
