Ingredients

- 8 lamb loin chops, 1-inch thick
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup unsalted butter, softened
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 clove garlic, minced
- 1 teaspoon lemon juice
Instructions
- Pat the lamb chops dry with paper towels.
- Rub chops with olive oil, then season with salt and pepper.
- In a small bowl, combine softened butter, parsley, rosemary, thyme, minced garlic, and lemon juice. Mix well to create the herb butter.
- Preheat a grill to medium-high heat.
- Grill the lamb chops for 3-4 minutes per side for medium-rare, or longer for desired doneness.
- Remove chops from the grill and let them rest for 5 minutes.
- Top each lamb chop with a dollop of herb butter before serving.
Notes
- Adjust grilling time based on the thickness of the chops and your preferred level of doneness.
- For extra flavor, marinate the lamb chops for at least 30 minutes before grilling.
- Leftover herb butter can be stored in the refrigerator for up to a week.
