Ingredients

  • 8 lamb loin chops, 1-inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice

Instructions

  1. Pat the lamb chops dry with paper towels.
  2. Rub chops with olive oil, then season with salt and pepper.
  3. In a small bowl, combine softened butter, parsley, rosemary, thyme, minced garlic, and lemon juice. Mix well to create the herb butter.
  4. Preheat a grill to medium-high heat.
  5. Grill the lamb chops for 3-4 minutes per side for medium-rare, or longer for desired doneness.
  6. Remove chops from the grill and let them rest for 5 minutes.
  7. Top each lamb chop with a dollop of herb butter before serving.
