Description

Sweet and caramelized griddled pineapple slices, perfect as a dessert or side dish.


Ingredients

  • 1 fresh pineapple, peeled, cored, and sliced into 1/2 inch rounds
  • 2 tablespoons honey
  • 1 tablespoon coconut oil, melted

Instructions

  1. Preheat a griddle or grill pan over medium heat.
  2. In a small bowl, whisk together the honey and melted coconut oil.
  3. Brush both sides of the pineapple slices with the honey mixture.
  4. Place the pineapple slices on the hot griddle.
  5. Cook for 2-3 minutes per side, or until golden brown and caramelized with grill marks.
  6. Remove from the griddle and serve warm.

Notes

  • For extra flavor, sprinkle a pinch of cinnamon or a squeeze of lime juice over the pineapple before serving.
