- 1 fresh pineapple, peeled, cored, and sliced into 1/2 inch rounds
- 2 tablespoons honey
- 1 tablespoon coconut oil, melted
Instructions
- Preheat a griddle or grill pan over medium heat.
- In a small bowl, whisk together the honey and melted coconut oil.
- Brush both sides of the pineapple slices with the honey mixture.
- Place the pineapple slices on the hot griddle.
- Cook for 2-3 minutes per side, or until golden brown and caramelized with grill marks.
- Remove from the griddle and serve warm.
Notes
- For extra flavor, sprinkle a pinch of cinnamon or a squeeze of lime juice over the pineapple before serving.
- This recipe can be easily scaled up or down depending on the number of servings needed.
- Leftover griddled pineapple can be stored in an airtight container in the refrigerator for up to 3 days.
