A fresh and creamy sandwich filled with a vibrant green goddess salad.
Ingredients

- 2 slices whole grain bread
- 1/2 cup chopped romaine lettuce
- 1/4 cup chopped cucumber
- 1/4 cup chopped avocado
- 2 tbsp Greek yogurt
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh basil
- 1 tsp lemon juice
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix Greek yogurt, parsley, basil, lemon juice, olive oil, salt, and pepper.
- Add romaine lettuce, cucumber, and avocado to the bowl. Toss to coat evenly.
- Toast the bread slices if desired.
- Spread the green goddess salad mixture evenly on one slice of bread.
- Top with the other slice of bread.
- Cut in half and serve immediately.
Notes
- Use fresh herbs for the best flavor.
- Add a pinch of garlic powder for extra taste.
- Replace Greek yogurt with sour cream or vegan yogurt if preferred.
