Description

A fresh and creamy sandwich filled with a vibrant green goddess salad.


Ingredients

Scale
  • 2 slices whole grain bread
  • 1/2 cup chopped romaine lettuce
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped avocado
  • 2 tbsp Greek yogurt
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh basil
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix Greek yogurt, parsley, basil, lemon juice, olive oil, salt, and pepper.
  2. Add romaine lettuce, cucumber, and avocado to the bowl. Toss to coat evenly.
  3. Toast the bread slices if desired.
  4. Spread the green goddess salad mixture evenly on one slice of bread.
  5. Top with the other slice of bread.
  6. Cut in half and serve immediately.

  • Use fresh herbs for the best flavor.
  • Add a pinch of garlic powder for extra taste.
