Description

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups cooked chicken, shredded
  • 2 cups green enchilada sauce
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Cook until softened.
  3. Stir in shredded chicken, green enchilada sauce, broth, cumin, and oregano.
  4. Bring to a simmer and cook for 15 minutes.
  5. Add corn and black beans. Simmer for another 5 minutes.
  6. Season with salt and pepper.
  7. Garnish with fresh cilantro before serving.
