- 1 bell pepper, diced
- 2 cups cooked chicken, shredded
- 2 cups green enchilada sauce
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Stir in shredded chicken, green enchilada sauce, broth, cumin, and oregano.
- Bring to a simmer and cook for 15 minutes.
- Add corn and black beans. Simmer for another 5 minutes.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.
