Description
A quick and flavorful Greek lemon rice dish ready in 35 minutes. Perfect as a side or light meal.
Ingredients

- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth
- 1/4 cup fresh lemon juice
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse the rice under cold water until the water runs clear. Drain well.
- Heat olive oil in a medium pot over medium heat. Add onion and sauté until soft (about 3 minutes).
- Add garlic and oregano. Cook for 1 minute until fragrant.
- Stir in the rice and cook for another 2 minutes to lightly toast.
- Pour in broth and lemon juice. Season with salt and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes until the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff with a fork and garnish with parsley before serving.
Notes
- For extra flavor, add a bay leaf while cooking.
- Letting the rice rest after cooking ensures perfect texture.
- Adjust lemon juice to taste.
