Description

A quick and flavorful Greek lemon rice dish ready in 35 minutes. Perfect as a side or light meal.


Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1/4 cup fresh lemon juice
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. Heat olive oil in a medium pot over medium heat. Add onion and sauté until soft (about 3 minutes).
  3. Add garlic and oregano. Cook for 1 minute until fragrant.
  4. Stir in the rice and cook for another 2 minutes to lightly toast.
  5. Pour in broth and lemon juice. Season with salt and pepper. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes until the liquid is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes.
  8. Fluff with a fork and garnish with parsley before serving.

Notes

  • For extra flavor, add a bay leaf while cooking.
  • Letting the rice rest after cooking ensures perfect texture.
