- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with 2 tbsp olive oil, salt, pepper, oregano, and thyme.
- Spread potatoes on a baking sheet and roast for 20 minutes.
- Rub chicken with remaining olive oil and season with salt and pepper.
- Add chicken to the baking sheet with potatoes.
- Roast for 20-25 minutes until chicken reaches 165°F (74°C).
- Sprinkle minced garlic and parmesan over chicken and potatoes.
- Return to oven for 5 minutes until cheese melts.
- Garnish with fresh parsley before serving.
