Description

A simple and delicious one-pan meal featuring tender chicken and crispy potatoes coated in a garlic parmesan sauce.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with 2 tbsp olive oil, salt, pepper, oregano, and thyme.
  3. Spread potatoes on a baking sheet and roast for 20 minutes.
  4. Rub chicken with remaining olive oil and season with salt and pepper.
  5. Add chicken to the baking sheet with potatoes.
  6. Roast for 20-25 minutes until chicken reaches 165°F (74°C).
  7. Sprinkle minced garlic and parmesan over chicken and potatoes.
  8. Return to oven for 5 minutes until cheese melts.
  9. Garnish with fresh parsley before serving.

  • Cut potatoes evenly for consistent cooking.
