- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract (alcohol-free)
- 1 3/4 cups (210g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (85g) rainbow sprinkles, plus more for rolling
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the 1/2 cup of rainbow sprinkles.
- Scoop dough by the tablespoonful and roll into balls. Roll each ball in additional sprinkles, if desired.
- Place the cookie dough balls about 2 inches apart on the prepared baking sheet.
- Bake for 9-11 minutes, or until the edges are lightly golden and the centers are set.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra chewy cookies, slightly underbake them.
- Store leftover cookies in an airtight container at room temperature for up to 3-4 days.
- You can use any color sprinkles you like to match a specific theme.
