Description

These funfetti cookies are soft, chewy, and loaded with colorful sprinkles. They’re perfect for parties or anytime you want a festive treat.


Ingredients

  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract (alcohol-free)
  • 1 3/4 cups (210g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (85g) rainbow sprinkles, plus more for rolling

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the 1/2 cup of rainbow sprinkles.
  7. Scoop dough by the tablespoonful and roll into balls. Roll each ball in additional sprinkles, if desired.
  8. Place the cookie dough balls about 2 inches apart on the prepared baking sheet.
  9. Bake for 9-11 minutes, or until the edges are lightly golden and the centers are set.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

  • For extra chewy cookies, slightly underbake them.
