Description

Crispy fried zucchini sticks, perfect as an appetizer or side dish.


Ingredients

  • 2 medium zucchini
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Vegetable oil for frying

Instructions

  1. Wash and trim the ends of the zucchini. Cut each zucchini into stick shapes, about 3 inches long and 1/2 inch thick.
  2. In a shallow dish, combine the flour, salt, pepper, and garlic powder.
  3. In another shallow dish, beat the eggs.
  4. In a third shallow dish, combine the breadcrumbs and Parmesan cheese.
  5. Dip each zucchini stick first in the flour mixture, shaking off any excess.
  6. Next, dip in the beaten eggs, letting any extra drip off.
  7. Finally, roll the zucchini stick in the breadcrumb mixture, pressing gently to ensure it’s fully coated.
  8. Heat about 2 inches of vegetable oil in a large skillet or deep pot over medium-high heat to 350°F (175°C).
  9. Carefully place a single layer of zucchini sticks into the hot oil. Do not overcrowd the pan.
  10. Fry for 2-3 minutes per side, or until golden brown and crispy.
  11. Remove the fried zucchini sticks with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  12. Serve immediately with your favorite dipping sauce.

Notes

  • For extra crispiness, you can double-coat the zucchini sticks by dipping them in egg and breadcrumbs twice.
  • Ensure the oil is at the correct temperature for best results; if too low, the zucchini will be greasy, and if too high, it will burn.
  • These are best served fresh.
