Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into cubes
  • 1/4 cup ice water
  • 6 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 cup water (for cornstarch slurry)
  • 1 teaspoon lemon juice

Instructions

  1. To make the pie crust, combine flour and salt in a large bowl. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix.
  3. Form the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  4. Preheat oven to 375°F (190°C).
  5. On a lightly floured surface, roll out the pie dough into a 12-inch circle. Carefully transfer it to a 9-inch pie plate. Trim and crimp the edges.
  6. Prick the bottom of the crust with a fork several times. Bake for 15-20 minutes, or until lightly golden. Let cool completely.
  7. In a medium saucepan, combine 1 cup of sliced strawberries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries soften and release their juices, about 5-7 minutes.
  8. In a small bowl, whisk together cornstarch and 1/4 cup water to create a slurry.
  9. Pour the cornstarch slurry into the strawberry mixture in the saucepan. Bring to a boil, stirring constantly, until the mixture thickens and becomes clear. Remove from heat and let cool slightly.
  10. Gently fold in the remaining fresh sliced strawberries into the cooled cooked strawberry mixture.
  11. Pour the strawberry filling into the cooled pie crust.
  12. Refrigerate for at least 4 hours, or until the filling is set.
  13. Serve chilled.

Notes

  • For best results, use ripe, firm strawberries.
  • The pie can be stored in the refrigerator for up to 3 days.
  • You can serve this pie with a dollop of whipped cream or a scoop of vanilla ice cream.
