Description

This recipe guides you through creating a delicious fresh strawberry cake, perfect for any occasion. The cake is moist, flavorful, and topped with a delightful strawberry frosting.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups fresh strawberries, hulled and diced
  • For the Frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup fresh strawberry puree
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Alternately add the dry ingredients and buttermilk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the diced fresh strawberries.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  10. To make the frosting: In a large bowl, beat the softened butter until creamy.
  11. Gradually add the powdered sugar, beating until smooth.
  12. Stir in the strawberry puree, vanilla extract, and a pinch of salt. Beat until light and fluffy.
  13. Once the cakes are completely cool, frost and decorate as desired.

Notes

  • Ensure all ingredients are at room temperature for best results.
  • Do not overmix the batter, as this can lead to a dry cake.
  • Fresh strawberry puree for the frosting can be made by blending fresh strawberries until smooth.
  • For a richer strawberry flavor, you can add a few drops of strawberry extract to the frosting.
