Description

A simple and healthy zucchini soup recipe that’s easy to make and packed with flavor.


Ingredients

Scale
  • 2 large zucchinis, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 cup heavy cream (optional)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add chopped zucchini, salt, pepper, and thyme. Cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes until zucchini is tender.
  6. Blend the soup until smooth using an immersion blender.
  7. Stir in heavy cream if using. Serve warm.

Notes

  • For a lighter version, skip the heavy cream.
  • Garnish with fresh herbs like parsley or basil.
